  • Fresh strawberries, hulled and sliced (about 2 cups)
  • Granulated sugar (1-2 tablespoons, depending on strawberry sweetness)
  • Fresh lemon juice (1 teaspoon)
  • Heavy whipping cream (1 cup, chilled)
  • Powdered sugar (2 tablespoons)
  • Pure vanilla extract (1 teaspoon)

Instructions

  1. Prepare the strawberries: In a medium bowl, combine 2 cups of sliced fresh strawberries with 1-2 tablespoons granulated sugar and 1 teaspoon fresh lemon juice. Stir gently to coat and let sit for 10-15 minutes to macerate.
  2. Whip the cream: Chill a mixing bowl and beaters in the fridge for about 10 minutes. Pour 1 cup of heavy whipping cream into the cold bowl, add 2 tablespoons powdered sugar and 1 teaspoon vanilla extract. Beat on medium-high speed until soft peaks form (about 3-4 minutes).
  3. Prepare the shortcake pieces: Break store-bought shortcakes into bite-sized chunks. Optionally, brush with melted butter and toast in a 350°F (175°C) oven for 5 minutes for extra crunch.
  4. Layer the parfaits: Spoon a layer of shortcake pieces (about 1/4 cup) at the bottom of each mason jar. Add a spoonful of macerated strawberries with some syrup. Dollop a generous layer of whipped cream (2-3 tablespoons). Repeat layers once more, finishing with a final whipped cream layer on top.
  5. Garnish and chill: Add a whole strawberry or a sprig of fresh mint on top. Cover jars with lids or plastic wrap and refrigerate for at least 30 minutes before serving.

Notes

Macerate strawberries for at least 10 minutes to develop flavor and syrup. Whip cream to soft peaks to avoid overbeating. Keep parfaits chilled until serving to maintain texture.
