Ingredients

  • Rotisserie chicken, shredded (about 3 cups)
  • Olive oil (2 tablespoons)
  • Yellow onion, diced (1 medium)
  • Carrots, peeled and sliced into rounds (3 medium)
  • Celery stalks, diced (2 large)
  • Garlic cloves, minced (3 cloves)
  • Dry white wine (¼ cup, optional)
  • Chicken broth, low-sodium (8 cups)
  • Dried thyme (1 teaspoon)
  • Dried oregano (½ teaspoon)
  • Bay leaves (2)
  • Egg noodles, wide (6 ounces, about 3 cups dry)
  • Fresh parsley, chopped (¼ cup)
  • Salt and black pepper (to taste)
  • Lemon juice (1 tablespoon, optional)

Instructions

  1. Shred the rotisserie chicken while still warm, removing skin and bones. Set aside about 3 cups.
  2. Heat olive oil in a large Dutch oven over medium heat. Add diced onion, carrots, and celery. Cook, stirring occasionally, until onions are translucent and vegetables soften, about 6-7 minutes.
  3. Add minced garlic and cook for 1 minute until fragrant. Do not let it burn.
  4. Pour in white wine (or a splash of broth) and stir, scraping up browned bits from the bottom. Let cook for 30 seconds.
  5. Add chicken broth, dried thyme, dried oregano, and bay leaves. Bring to a gentle boil, then reduce heat to low and simmer uncovered for 15 minutes.
  6. Add egg noodles to the simmering broth. Cook according to package directions until al dente, about 8-9 minutes, stirring occasionally.
  7. Remove bay leaves. Stir in shredded chicken and let warm through for about 2 minutes. Do not boil.
  8. Season with salt and black pepper to taste. Stir in fresh parsley and lemon juice if using. Serve hot.

Notes

For leftovers, cook noodles separately and add to individual bowls to prevent them from absorbing broth and becoming mushy. If soup tastes flat, add a splash of fish sauce or soy sauce. Let soup rest 5-10 minutes before serving for best flavor.
