Instructions

  1. In a large mixing bowl, combine 1 cup rolled oats, 1/4 cup dark cocoa powder, 1/2 cup protein powder, 2 tablespoons chia seeds (if using), and a pinch of salt. Stir gently until evenly distributed (about 2 minutes).
  2. Add 1 cup natural peanut butter, 1/4 cup honey or maple syrup, and 1 teaspoon vanilla extract to the dry mixture. Mix thoroughly with a sturdy spatula or wooden spoon until well combined and sticky (3 to 5 minutes).
  3. Fold in 1/3 cup mini dark chocolate chips, reserving a few to press on top of the balls later.
  4. Chill the mixture in the refrigerator for 15-20 minutes to firm up.
  5. Once chilled, roll the mixture into 1-inch balls using a cookie scoop or your hands. Place the balls on a baking sheet lined with parchment paper. This recipe makes about 20 balls.
  6. Refrigerate the rolled balls for at least 30 minutes to set and develop a chewy texture.
