Easy No-Bake Peanut Butter Oat Energy Bites

These no-bake energy bites combine peanut butter, oats, and honey for a quick, chewy, and delicious snack perfect for lunchboxes and on-the-go energy.

  • 1 1/2 cups (135 g) old-fashioned rolled oats
  • 3/4 cup (190 g) natural peanut butter (smooth or crunchy)
  • 1/3 cup (113 g) honey
  • 2 tablespoons (20 g) chia seeds (optional)
  • 1/4 cup (40 g) mini dark chocolate chips
  • 1 teaspoon (5 ml) vanilla extract
  • Pinch of sea salt

Instructions

  1. Measure out all ingredients: 1 1/2 cups rolled oats, 3/4 cup peanut butter, 1/3 cup honey, 2 tablespoons chia seeds, 1/4 cup mini dark chocolate chips, 1 teaspoon vanilla extract, and a pinch of sea salt.
  2. Optional: Pulse the oats in a food processor 4-5 times until slightly broken down but not powdery for a finer texture.
  3. In a mixing bowl, combine peanut butter, honey, and vanilla extract. Stir until smooth and glossy.
  4. Add oats, chia seeds, sea salt, and chocolate chips to the wet mixture. Mix thoroughly until a sticky dough forms. If too dry, add honey teaspoon by teaspoon until it sticks.
  5. Roll the mixture into 1-inch balls using your hands. Wet hands slightly if mixture is sticky. This recipe makes about 20 bites.
  6. Place the bites on a parchment-lined baking sheet or plate and refrigerate for at least 30 minutes to set.
  7. Once chilled, pack the bites in lunchboxes or snack containers. They hold well at room temperature for a few hours but keep refrigerated for longer freshness.

Notes

If bites are crumbly, pulse oats more or add a bit more honey. Use room temperature peanut butter and honey for easier mixing. Wet hands help with rolling. Can substitute peanut butter with almond or sunflower seed butter for nut-free version. Can use maple syrup or agave nectar instead of honey for vegan version. Store in airtight container in fridge up to 1 week or freeze up to 3 months.
