  • 1 teaspoon baking soda

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5-inch loaf pan with non-stick spray or line it with parchment paper, leaving a couple inches of overhang on the long sides.
  2. In your large mixing bowl, mash the three ripe bananas with a fork or potato masher until mostly smooth with a few small lumps.
  3. Add the ½ cup vegetable oil, 2 room-temperature eggs, ¾ cup sugar, and 1 teaspoon vanilla extract to the mashed bananas. Whisk until smooth and well combined.
  4. Sprinkle the 1 ½ cups flour, 1 teaspoon baking soda, ½ teaspoon salt, and ½ teaspoon cinnamon over the wet mixture. Fold gently with a spatula or wooden spoon until just combined—a few lumps are fine.
  5. If using, gently fold in the chocolate chips or walnuts.
  6. Pour the batter into the prepared pan and spread evenly. Tap the pan gently on the counter to release air bubbles.
