A quick and delicious breakfast wrap featuring warm peanut butter, ripe banana, Greek yogurt, and crunchy granola, all wrapped in a soft tortilla. Ready in just 5 minutes, it’s perfect for busy mornings.

  • 1 large flour tortilla (burrito size; use whole wheat or spinach for extra fiber)
  • 2 tablespoons creamy peanut butter (natural preferred)
  • 1 medium ripe banana
  • 2 tablespoons plain Greek yogurt (full-fat or 2%)
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons crushed granola
  • Pinch of sea salt
  • Optional: 1 tablespoon chia seeds or flax seeds
  • Optional: 1/2 teaspoon cinnamon

Instructions

  1. Warm the tortilla in the microwave for 15 seconds or in a dry skillet over medium heat for 20 seconds per side.
  2. Spread 2 tablespoons of peanut butter evenly across the center of the tortilla, leaving about an inch border.
  3. In a small bowl, mix 2 tablespoons Greek yogurt with 1 tablespoon honey until smooth. Drizzle over the peanut butter layer.
  4. Peel and slice the banana lengthwise into 1/4-inch strips. Arrange evenly over the yogurt mixture.
  5. Sprinkle 2 tablespoons crushed granola, a pinch of sea salt, and optional cinnamon or chia seeds over the banana.
  6. Fold the sides of the tortilla inward, then tightly roll from the bottom up, tucking the filling as you go.
  7. Slice diagonally and serve immediately, or wrap in parchment paper for later.

Notes

Warm the tortilla to prevent cracking and ensure easy spreading. Don’t overfill to avoid leaks. For meal prep, mix yogurt and honey the night before and slice banana with lemon juice to prevent browning.
