This Easy Pumpkin Dump Cake with Yellow Cake Mix is the ultimate no-fuss dessert that tastes like you spent hours on it. With just four main ingredients and a simple dump-and-bake method, it delivers a buttery, crunchy topping over a soft, spiced pumpkin layer—perfect for fall gatherings or a cozy weeknight treat.

Ingredients

Scale
  • 1 can (15 oz) pumpkin puree (not pumpkin pie filling)
  • 1 can (12 oz) evaporated milk
  • 3 large eggs (room temperature preferred)
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 box (15.25 oz) yellow cake mix (classic, not butter recipe or pudding in the mix)
  • 3/4 cup unsalted butter, melted
  • Optional: 1 cup chopped pecans or walnuts
  • Optional: 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, combine pumpkin puree, evaporated milk, eggs, granulated sugar, and pumpkin pie spice. Whisk until smooth and well combined. If using vanilla extract, add it now.
  3. Pour the pumpkin mixture into the prepared dish and spread evenly with a spatula.
  4. Sprinkle the entire box of dry yellow cake mix evenly over the pumpkin layer. Do not stir or mix.
  5. Slowly and evenly drizzle the melted butter over the dry cake mix, covering as much surface as possible. If using nuts, sprinkle them on top.
  6. Bake for 45-55 minutes, until the top is deep golden brown and the filling is bubbly around the edges. The center should be mostly set with a slight jiggle.
  7. Let the cake cool on a wire rack for at least 15-20 minutes before serving to allow the pumpkin layer to set.

Notes

Don’t stir the cake mix into the pumpkin layer—keep it dry for the best texture. Let the cake rest for at least 20 minutes after baking to avoid a soupy center. For a crunchier topping, add chopped nuts or a sprinkle of coarse sugar before baking. This dessert tastes even better the next day as flavors meld.
