Ingredients

Scale
  • 4 ounces Brie or Camembert
  • 2 ounces aged Gouda or sharp cheddar
  • 2 ounces blue cheese or goat cheese
  • 2–3 tablespoons honey
  • 1/4 cup walnuts or pecans
  • 1/4 cup almonds or cashews
  • 1/2 cup red grapes or sliced apple
  • 1/2 cup fresh figs or dried apricots
  • 4–6 ounces crackers or bread (water crackers and baguette slices)
  • 1 tablespoon fresh rosemary or thyme (optional, for garnish)
  • 1–2 tablespoons balsamic glaze (optional)
  • A few slices of prosciutto or salami (optional)

Instructions

  1. Toast the nuts: Heat a dry skillet over medium heat. Add walnuts and almonds. Toast for 2-3 minutes, shaking occasionally, until fragrant. Let cool on a plate.
  2. Prepare the cheese: Take Brie out of fridge 10 minutes before serving. Slice Gouda into thin triangles. Crumble blue cheese. Place Brie whole on board.
  3. Wash and prep fruit: Rinse grapes and pat dry. Slice apple into thin wedges and toss with lemon juice to prevent browning. If using figs, cut in half lengthwise.
  4. Arrange the board: Place small bowls on board. Pour honey into one bowl, put toasted nuts in another. Arrange cheeses in different spots. Place Brie in center or slightly off-center. Fan out Gouda slices and pile blue cheese in a small cluster.
  5. Add fruit and crackers: Fill gaps with grapes, apple slices, and figs. Place crackers around edges, overlapping slightly. Leave some space between items.
  6. Drizzle and garnish: Drizzle honey over Brie and nuts. Sprinkle fresh rosemary or thyme over cheese. Add balsamic glaze in a zigzag pattern if using.
  7. Serve immediately: Bring board to table with extra napkins and small plates. Let your partner dig in right away.

Notes

Toast nuts right before serving for best crunch. Use room temperature cheese for creamier texture. Don’t overcrowd the board—stick to 3 cheeses, 2 fruits, and 2 nuts. For a vegan version, use plant-based cheese and agave syrup instead of honey. For a spicy twist, add red pepper flakes to the honey.
