Instructions

  1. Preheat your oven to 425°F (220°C). Line your baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, combine shredded cheese, cooked chicken (if using), black beans, corn, green onions, jalapeños, cumin, smoked paprika, salt, and pepper. Mix well to distribute the spices evenly.
  3. Lay out half of the tortillas on the prepared baking sheet. Spray or brush a light layer of olive oil on each tortilla.
  4. Divide the filling evenly among the tortillas, spreading it out but leaving about a ½ inch border around the edges.
  5. Top with the remaining tortillas, pressing down gently to seal. Lightly brush the top tortillas with olive oil or melted butter.
  6. Bake in the preheated oven for 12-15 minutes. Rotate the baking sheet at around 8 minutes to ensure even cooking. The quesadillas should be golden brown and crispy on the edges, with melted cheese inside.
  7. Remove from the oven and let cool for 2-3 minutes to allow the filling to set.
  8. Slice each quesadilla into wedges using a sharp knife or pizza cutter. Serve warm with sour cream, guacamole, or your favorite salsa.
