  • 3 tablespoons honey
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1 tablespoon smoked paprika
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • Fresh cilantro for garnish
  • ¼ cup crumbled cotija cheese (optional)

Instructions

  1. Prep the Corn: Husk the corn and remove all silk. Rinse under cold water and pat dry.
  2. Cut the Corn into Ribs: Cut off the tip and stem end of each ear. Stand the corn upright and cut straight down through the center to split in half lengthwise. Lay each half flat and cut lengthwise again to get 4 ribs per ear (16 total).
  3. Make the Glaze: In a large bowl, whisk together honey, lime juice, olive oil, smoked paprika, garlic powder, salt, black pepper, and cayenne (if using).
  4. Toss the Corn Ribs: Add the corn ribs to the bowl and toss gently with your hands to coat evenly. Let sit for 5-10 minutes while preheating the grill.
  5. Preheat the Grill: Heat grill to medium-high (400-425°F / 200-220°C). Clean and oil the grates.
  6. Grill the Corn Ribs: Place corn ribs cut-side down on the grill. Cook 4-5 minutes without moving, then flip and cook another 4-5 minutes until tender with charred spots and bubbling glaze.
  7. Baste and Finish: During the last minute, brush any remaining glaze over the ribs. Watch carefully to prevent burning.
  8. Garnish and Serve: Transfer to a platter, sprinkle with cilantro and cotija cheese (if using), and squeeze extra lime juice on top. Serve immediately.

For best results, don’t overcrowd the grill—cook in batches if needed. Watch the honey carefully as it burns quickly. Let the corn ribs rest 2-3 minutes before serving to allow the glaze to set. If you don’t have a grill, use a grill pan on the stovetop or broil in the oven.
