Easy Spring Funfetti Cake Recipe Perfect for Birthdays

A tender, moist vanilla cake dotted with rainbow sprinkles, topped with silky buttercream frosting. Perfect for spring birthdays and any celebration that calls for a little joy.

  • 2 ½ cups (312g) all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (226g) unsalted butter, softened
  • 1 ½ cups (300g) granulated sugar
  • 3 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) whole milk, room temperature
  • ½ cup (90g) rainbow jimmies sprinkles
  • 1 cup (226g) unsalted butter, softened (for frosting)
  • 4 cups (480g) powdered sugar, sifted
  • 3–4 tablespoons (45-60ml) heavy cream
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans, line bottoms with parchment paper, and grease parchment.
  2. In a medium bowl, whisk together flour, baking powder, and salt for about 20 seconds. Set aside.
  3. In a large bowl, beat butter and sugar on medium speed for 3-4 minutes until light, fluffy, and pale yellow. Scrape down bowl halfway through.
  4. Add eggs one at a time, beating well after each addition. Beat in vanilla extract.
  5. With mixer on low, add dry ingredients in three additions, alternating with milk, starting and ending with dry ingredients. Mix just until combined.
  6. Remove bowl from mixer. Gently fold in sprinkles with a rubber spatula until evenly distributed.
  7. Divide batter evenly between prepared pans. Smooth tops. Bake for 25-30 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs.
  8. Cool cakes in pans for 10 minutes. Run a knife around edges, invert onto a cooling rack, peel off parchment, and cool completely (about 1 hour).
  9. For frosting: Beat 1 cup softened butter on medium speed until smooth and creamy (about 2 minutes). Gradually add sifted powdered sugar, beating on low. Add vanilla and salt. Beat in heavy cream one tablespoon at a time until smooth and spreadable.
  10. Place one cake layer on serving plate. Spread about ¾ cup frosting evenly on top. Place second layer on top. Apply a thin crumb coat, refrigerate 15 minutes, then apply final layer of frosting. Top with extra sprinkles if desired.

Notes

Use room temperature ingredients for best results. Don’t overmix the batter. Use jimmies sprinkles (not nonpareils) to prevent color bleeding. A crumb coat helps achieve a professional finish. Cake tastes even better the next day.
