  • 3 pounds fresh peaches, peeled, pitted, and chopped
  • 1/2 cup granulated sugar (adjust based on peach ripeness)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons fresh lemon juice
  • 1/2 cup water

Instructions

  1. Prepare the peaches by peeling, pitting, and chopping about 3 pounds of fresh peaches into small pieces. Blanching peaches in boiling water for 30 seconds can make peeling easier.
  2. In a large heavy-bottomed pot, combine the chopped peaches, 1/2 cup sugar, 1 teaspoon ground cinnamon, 1/2 cup water, and 2 tablespoons fresh lemon juice. Stir gently to mix.
  3. Place the pot over medium heat and bring to a gentle simmer. Reduce heat to low, cover loosely, and cook for 40–50 minutes, stirring occasionally until peaches break down and mixture thickens.
  4. Remove from heat and stir in 1 teaspoon pure vanilla extract.
  5. Puree the mixture using an immersion blender or transfer to a blender and blend until smooth or leave some chunks for texture.
  6. Let the peach butter cool to room temperature, then transfer to glass jars or airtight containers. Refrigerate and use within two weeks or freeze for longer storage.

Notes

Blanch peaches for easier peeling. Stir frequently but gently during simmering to avoid burning. Adjust sugar based on peach ripeness. Add vanilla off heat to preserve flavor. Use frozen peaches thawed and drained if fresh are unavailable.
