These easy turkey and cheese roll-ups are a quick, no-cook lunchbox solution made with simple ingredients. They’re perfect for busy mornings and can be customized with your favorite add-ins.

  • 4 (8-inch) flour tortillas
  • 68 slices deli turkey (honey roasted or smoked)
  • 4 cheese sticks (mozzarella, cheddar, or your favorite)
  • 2 tablespoons cream cheese, softened
  • Optional: lettuce leaves, thin cucumber strips, bell pepper slices, mustard or mayonnaise

Instructions

  1. Prep your tortillas: Take tortillas out of the fridge and let them sit at room temperature for about 5 minutes, or microwave for 10-15 seconds until soft and flexible.
  2. Spread the cream cheese: Using a butter knife, spread a thin, even layer of cream cheese over the entire surface of each tortilla, leaving about a half-inch border around the edges.
  3. Layer the turkey: Place 2-3 slices of turkey on top of the cream cheese, overlapping them slightly to cover most of the tortilla surface.
  4. Add the cheese: Place a cheese stick or cheese slice along one edge of the tortilla. If using string cheese, peel it into strips for easier rolling.
  5. Add any extras: Add lettuce leaves, cucumber strips, or a thin layer of mustard if desired. Do not overstuff.
  6. Roll it up tightly: Starting from the edge with the cheese, roll the tortilla tightly but gently, keeping the roll snug as you go. Tuck in the sides if desired.
  7. Seal the edge: Press down gently to seal the edge with the cream cheese. Add a tiny bit more cream cheese if needed.
  8. Chill for 10 minutes: Place the rolled tortillas in the fridge for about 10 minutes to set and make slicing easier.
  9. Slice and serve: Using a sharp knife, slice each roll into 1-inch pieces. Arrange cut-side up in a lunchbox or on a plate.

Notes

For best results, use room temperature tortillas and cream cheese. Chilling the roll-ups before slicing is essential for clean cuts. Store assembled roll-ups in an airtight container in the refrigerator for up to 3 days. Freeze unsliced roll-ups for up to 1 month.
