A simple, festive, and forgiving layered jello parfait recipe perfect for summer parties, featuring vibrant red, white, and blue layers with fresh berries and creamy whipped topping.

  • 1 (3 oz / 85 g) packet red fruit-flavored gelatin (strawberry or cherry)
  • 1 cup (240 ml) boiling water
  • 1 cup (240 ml) cold water
  • Fresh strawberries, sliced (about ½ cup / 75 g, optional)
  • 1 (8 oz / 225 g) package cream cheese, softened
  • 1 cup (240 ml) heavy whipping cream or cool whip (whipped topping)
  • ½ cup (60 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 (3 oz / 85 g) packet blue fruit-flavored gelatin (blue raspberry or blueberry)
  • 1 cup (240 ml) boiling water
  • 1 cup (240 ml) cold water
  • Fresh blueberries (about ½ cup / 75 g, optional)

Instructions

  1. Make the Red Jello Layer: Dissolve the red gelatin packet in 1 cup boiling water, stir for 2 minutes until dissolved. Add 1 cup cold water, stir gently, and cool at room temperature for 15 minutes. Fold in strawberries if using. Pour into parfait glasses filling one-third. Refrigerate 30–45 minutes until firm.
  2. Prepare the White Cream Layer: Beat softened cream cheese with powdered sugar and vanilla until smooth. Whip heavy cream to soft peaks. Fold whipped cream into cream cheese mixture until fluffy. Spoon or pipe over red layer filling another third of the glass. Chill 30 minutes until firm.
  3. Make the Blue Jello Layer: Dissolve blue gelatin in 1 cup boiling water, stir, add 1 cup cold water, cool 15 minutes. Stir in blueberries if using. Layer on top of white cream layer filling glasses to the top. Refrigerate at least 2 hours or overnight to set.
  4. Serve and Enjoy: Garnish with extra berries or mint if desired. Serve chilled.

Notes

Let each gelatin layer set completely before adding the next to keep clean layers. Cool gelatin to room temperature before pouring to avoid melting the cream layer. Use a spoon or piping bag to layer gently. Softened cream cheese should be smooth to avoid lumps. If in a hurry, chill layers in freezer for 10-15 minutes but watch carefully to avoid freezing the cream layer.
