  • 1 store-bought or homemade flatbread (about 10-inch diameter)
  • 1 tablespoon olive oil
  • 4 oz (115 g) goat cheese, softened
  • 68 fresh figs, sliced
  • Fresh thyme leaves (optional)
  • Pinch of flaky sea salt
  • ⅓ cup (113 g) honey
  • ½ teaspoon crushed red pepper flakes
  • 1 teaspoon apple cider vinegar (optional)

Instructions

  1. Preheat the oven to 450°F (230°C). Place your baking sheet or pizza stone in the oven while it heats for about 15 minutes.
  2. In a small saucepan over low heat, combine honey and crushed red pepper flakes. Warm gently for 3-5 minutes, stirring occasionally. Add apple cider vinegar if using, stir, then remove from heat and set aside.
  3. Lightly brush the flatbread with olive oil on both sides. Transfer to a piece of parchment paper for easy handling.
  4. Spread the softened goat cheese evenly over the flatbread, leaving a small border around the edges, about ¼ inch thick.
  5. Arrange fresh fig slices evenly over the goat cheese, spacing them to allow roasting rather than steaming.
  6. Slide the flatbread on the parchment onto the preheated stone or baking sheet. Bake for 8-10 minutes until edges are golden and goat cheese is slightly bubbly.
  7. Remove from oven, sprinkle fresh thyme leaves and flaky sea salt over the top. Immediately drizzle the warm hot honey evenly across the flatbread.
  8. Let cool for 2 minutes before slicing into wedges and serving warm.

Notes

Preheat your baking surface for a crisp crust. Use softened goat cheese for easier spreading. Pat figs dry if they release too much juice. Adjust red pepper flakes in honey for desired heat. For gluten-free, use gluten-free flatbread. For vegan, substitute goat cheese with almond-based cheese and honey with maple syrup plus cayenne.
