These firecracker chicken skewers feature a sticky, sweet, and spicy honey sriracha glaze that caramelizes beautifully on the grill, delivering juicy, tender chicken with a punchy smoky kick. Perfect for quick weeknight dinners or weekend cookouts.

  • 1.5 lbs (680g) chicken breasts or thighs, cut into bite-sized chunks
  • 1/4 cup (85g) honey
  • 3 tbsp (45ml) sriracha sauce
  • 2 tbsp (30ml) soy sauce (or tamari for gluten-free)
  • 3 cloves garlic, minced
  • 1 tbsp (15ml) rice vinegar
  • 2 tbsp (30ml) olive oil (or avocado oil)
  • 1/2 tsp (1g) ground black pepper
  • 1/4 tsp (0.5g) red pepper flakes (optional)
  • Wooden or metal skewers (soak wooden skewers in water for 30 minutes before grilling)

Instructions

  1. Cut 1.5 lbs (680g) of chicken breasts or thighs into roughly 1-inch (2.5 cm) chunks. Pat dry with paper towels.
  2. In a bowl, combine 2 tbsp (30ml) olive oil, 2 tbsp (30ml) soy sauce, minced garlic, 1/2 tsp (1g) ground black pepper, and optional 1/4 tsp (0.5g) red pepper flakes. Whisk well.
  3. Toss chicken chunks in the marinade until well coated. Cover and refrigerate for at least 30 minutes, up to 2 hours.
  4. In a separate bowl, mix 1/4 cup (85g) honey, 3 tbsp (45ml) sriracha sauce, and 1 tbsp (15ml) rice vinegar until smooth. Set aside.
  5. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  6. Thread marinated chicken pieces onto skewers, leaving a little space between chunks.
  7. Preheat grill or grill pan to medium-high heat (about 400°F / 204°C). Lightly oil grill pan if using.
  8. Grill skewers for 4-5 minutes per side. After flipping, brush generously with honey sriracha glaze. Repeat glazing 2-3 times during cooking to build a sticky, caramelized coating.
  9. Check internal temperature with a meat thermometer; chicken should reach 165°F (74°C). Glaze should be bubbly and slightly charred.
  10. Remove skewers from heat and let rest for 5 minutes before serving. Serve hot with extra glaze on the side.

Notes

Do not marinate chicken for more than 2 hours to avoid mushy texture. Apply glaze in thin layers during cooking to prevent burning. Soak wooden skewers before grilling to prevent fire. Use chicken thighs for juicier results. If glaze burns too quickly, lower heat or move skewers to cooler part of grill. Rest skewers after cooking to lock in juices.
