  • 3 tablespoons sriracha sauce (adjust to taste)

  • 1 tablespoon rice vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper, freshly cracked

Instructions

  1. Prep the Wings (10 minutes): Rinse and pat dry the chicken wings with paper towels. If not already split, cut them into flats and drumettes using a sharp knife.
  2. Make the Glaze (5 minutes): In a medium bowl, whisk together honey, sriracha sauce, soy sauce, minced garlic, rice vinegar, smoked paprika, black pepper, salt, and olive oil. Taste to ensure a balance of sweet, spicy, and tangy.
  3. Marinate the Wings (at least 20 minutes, up to 2 hours): Toss the wings in half of the glaze mixture, coating thoroughly. Refrigerate to soak in flavors.
  4. Preheat the Grill (10 minutes): Heat grill to medium-high (375°F to 400°F). Lightly oil the grates to prevent sticking.
  5. Grill the Wings (20-25 minutes): Place wings skin side down on the grill. Grill 10-12 minutes, flip, and grill another 10-12 minutes. Watch for flare-ups. Wings are done when juices run clear and internal temperature reaches 165°F.
  6. Glaze and Finish (5 minutes): Brush remaining glaze over wings repeatedly during the last 5 minutes to build a sticky, shiny coating.
  7. Rest and Serve: Remove wings from grill and let rest for 5 minutes. Garnish with cilantro or green onions if desired and serve hot.

Notes

Pat wings dry before marinating for crispiness. Use indirect heat to cook through and finish on direct heat for char. Brush multiple thin layers of glaze during last 5 minutes. Keep a spray bottle of water nearby to control flare-ups. Rest wings after grilling for juiciness. Oven-bake alternative: 425°F for 40-45 minutes, turning once and glazing last 10 minutes.
