Instructions

  1. Prepare the marinade by whisking together soy sauce, honey, rice vinegar, minced garlic, grated ginger, toasted sesame oil, and red pepper flakes if using in a medium bowl.
  2. Add the chicken thigh cubes to the marinade, toss to coat evenly, cover, and refrigerate for at least 30 minutes and up to 4 hours.
  3. Peel and cut the pineapple into 1-inch chunks. Soak wooden skewers in water for 30 minutes to prevent burning.
  4. Alternate threading chicken pieces and pineapple chunks onto skewers, leaving space between each piece for even cooking.
  5. Preheat the grill to medium-high heat (around 400°F/200°C). Clean and oil the grates.
  6. Grill the skewers for 5-7 minutes per side, turning carefully with tongs, until chicken reaches an internal temperature of 165°F (74°C) and pineapple is caramelized.
  7. Remove skewers from the grill and let rest for 5 minutes.
  8. Sprinkle with toasted sesame seeds and chopped green onions before serving.
