  • 12 medium jalapeños, seeded and finely chopped
  • 1 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • 1/4 cup water
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Peel the peaches by blanching them in boiling water for 30 seconds, then plunging into ice water. Dice into roughly 1/2-inch pieces.
  2. Remove stems and seeds from jalapeños, then finely chop.
  3. In a medium heavy-bottomed saucepan, combine diced peaches, chopped jalapeños, sugar, lemon juice, and water. Stir gently to combine.
  4. Place the pan over medium heat and bring the mixture to a simmer. Stir frequently to prevent sticking. Cook for 30-35 minutes until peaches break down and mixture thickens.
  5. Test the jam’s consistency by placing a small spoonful on a chilled plate and tilting it. If it wrinkles and doesn’t run off quickly, it’s done. If runny, cook a few minutes longer and test again.
  6. Remove from heat and stir in vanilla extract if using.
  7. Let the jam cool slightly before transferring to clean glass jars. Seal and refrigerate once cooled. Jam will thicken more as it chills.

Use ripe, high-pectin peaches for best results. Stir gently to keep chunks of fruit intact. Test jam consistency often and be patient; jam thickens as it cools.
