Instructions

  1. Cube about 8 cups of brioche or challah into roughly 1-inch pieces. Spread evenly in a 9×13-inch baking dish.
  2. In a large bowl, whisk together 8 large eggs, 2 cups whole milk, 1 cup heavy cream, ½ cup granulated sugar, 2 teaspoons vanilla extract, 2 teaspoons ground cinnamon, and ½ teaspoon salt until fully combined and slightly frothy.
  3. Pour the custard mixture evenly over the bread cubes, pressing gently to ensure all pieces are soaked. Cover tightly with aluminum foil and refrigerate overnight or for at least 6 hours.
  4. In a medium bowl, combine ¾ cup all-purpose flour, ½ cup packed light brown sugar, ½ teaspoon ground cinnamon, and ¼ cup chopped nuts if using. Cut in ½ cup cold unsalted butter with a pastry cutter or fork until mixture resembles coarse crumbs. Keep refrigerated until ready to use.
  5. Preheat oven to 350°F (175°C). Remove the French toast bake from the fridge, uncover, and sprinkle the streusel evenly over the top. Cover loosely with foil and bake for 30 minutes.
