Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with liners and lightly spray with non-stick spray.
  2. In a large bowl, mash the bananas with a fork or potato masher until smooth with a few small lumps.
  3. Add the peanut butter, eggs, honey (or maple syrup), vanilla extract, and almond milk to the mashed bananas. Whisk until smooth and well combined.
  4. In a separate medium bowl, whisk together the flour, protein powder, baking soda, baking powder, and salt.
  5. Pour the dry ingredients into the wet mixture. Use a rubber spatula to fold gently until just combined—do not overmix. A few small lumps are fine.

  7. Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.
