Fresh Avocado Toast with Perfect Poached Egg

A quick and easy breakfast recipe featuring creamy mashed avocado on toasted bread topped with a perfectly poached egg and everything bagel seasoning for a flavorful start to your day.

Ingredients

  • 2 slices of sturdy bread (sourdough or whole grain preferred)
  • 1 ripe avocado
  • 1 teaspoon fresh lemon juice
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • 2 large eggs, room temperature
  • 1 tablespoon white vinegar
  • About 4 cups (1 liter) water for poaching
  • Everything bagel seasoning (store-bought or homemade mix of sesame seeds, poppy seeds, dried garlic, onion flakes, and sea salt)
  • Optional: pinch of red pepper flakes
  • Optional: microgreens or chopped fresh herbs (chives or cilantro) for garnish

Instructions

  1. Toast the bread slices to your preferred crispness, about 3-5 minutes in a toaster or under the broiler until golden and sturdy.
  2. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add lemon juice, salt, and freshly cracked black pepper. Mash gently with a fork until creamy but still slightly chunky. Set aside.
  3. Fill a medium saucepan with about 4 cups (1 liter) of water. Add 1 tablespoon white vinegar and bring to a gentle simmer over medium heat (small bubbles, not boiling).
  4. Crack one egg into a small bowl or ramekin. Stir the simmering water to create a gentle whirlpool, then carefully slide the egg into the center. Poach for 3-4 minutes depending on desired yolk doneness (3 minutes for runny, 4 minutes for slightly firmer). Repeat with the second egg.
  5. Use a slotted spoon to lift the eggs out of the water and let excess water drip back into the pot. Place eggs on a paper towel-lined plate to drain briefly.
  6. Spread a generous layer of mashed avocado evenly over each toast slice. Carefully place one poached egg on top of each slice.
  7. Sprinkle everything bagel seasoning liberally over the eggs and avocado. Add a pinch of red pepper flakes if desired and garnish with fresh herbs or microgreens.

Notes

Use very fresh eggs for best poaching results. Adding vinegar to poaching water helps egg whites coagulate quickly. Keep water at a gentle simmer, not boiling. If eggs spread too much, they may not be fresh. Soft-boiled eggs can be a quicker alternative but lose the delicate poached texture. Store mashed avocado with lemon juice in an airtight container to prevent browning.
