Instructions

  1. Prepare the Honey Mustard Dip: In a small bowl, whisk together 2 tablespoons Dijon mustard, 1 tablespoon honey, 1 tablespoon mayonnaise, and 1 teaspoon apple cider vinegar. Add a pinch of salt and freshly cracked pepper. Taste and adjust sweetness or tang as you prefer. Set aside.
  2. Prep the Ingredients: Rinse cherry tomatoes and basil leaves gently, then pat dry. Drain mozzarella pearls if packed in water. Halve tomatoes if large to match mozzarella size.
  3. Assemble the Mini Caprese Skewers: Thread one cherry tomato, one mozzarella pearl, and one fresh basil leaf onto toothpicks or small skewers. Repeat until you have about 20 skewers. Lay them neatly in your bento box compartment.
  4. Season the Skewers: Drizzle the skewers lightly with extra virgin olive oil, then sprinkle salt and cracked black pepper over the top.
  5. Pack the Bento Box: Place the honey mustard dip in a small container or compartment within your lunch box. Add optional items like crackers, sliced cucumber, or fresh fruit to complement the skewers.
  6. Final Touches: Close your lunch box securely. If prepping in advance, store in the refrigerator and take out about 10 minutes before eating to bring flavors to life.
