  • 2 large fresh lemons, juiced and zested
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons fresh rosemary, finely chopped
  • 1/4 cup fresh flat-leaf parsley, chopped
  • 3 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • 1 teaspoon honey or maple syrup (optional)

Instructions

  1. Prepare the Marinade (5 minutes): In a medium bowl, combine the juice and zest of 2 lemons, minced garlic, chopped fresh thyme, rosemary, parsley, olive oil, salt, and pepper. Whisk together until well blended. If you prefer a hint of sweetness, add honey or maple syrup here and whisk again.
  2. Marinate the Chicken (at least 30 minutes to 2 hours): Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is evenly coated. Seal or cover and refrigerate.
  3. Preheat the Grill (10 minutes): Heat your grill to medium-high (about 400°F / 200°C). Clean and oil the grates lightly to prevent sticking.
  4. Grill the Chicken (6-8 minutes per side): Remove chicken from marinade, letting excess drip off. Place on the grill and cook for 6-8 minutes per side, turning once halfway. Use tongs to flip gently. Look for nice grill marks and an internal temperature of 165°F (74°C).
  5. Rest the Chicken (5 minutes): Transfer grilled chicken to a plate and cover loosely with foil. Resting allows juices to redistribute.
  6. Assemble the Platter: Slice the chicken across the grain, fan it on a serving platter, and garnish with additional fresh herbs and lemon wedges.

Notes

Do not marinate chicken for more than 2 hours to avoid mushy texture. Let chicken rest after grilling for juicy results. Use fresh herbs for best flavor. Keep some marinade reserved before adding raw chicken to drizzle over finished dish, but do not reuse marinade that touched raw chicken.
