Fresh Grilled Peach and Burrata Salad Recipe with Easy Balsamic Glaze

A quick and easy summer salad featuring juicy grilled peaches, creamy burrata cheese, and a sweet-tart balsamic glaze, perfect for gatherings or a light meal.

  • 34 ripe but firm fresh peaches, halved and pitted
  • 1 ball (about 8 ounces) burrata cheese
  • A handful of fresh basil leaves, torn (optional)
  • ½ cup (120 ml) balsamic vinegar
  • 12 tablespoons honey or brown sugar
  • 2 tablespoons extra virgin olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional add-ins: toasted pine nuts or walnuts, arugula or baby greens

Instructions

  1. Prepare the balsamic glaze: In a small saucepan over medium heat, combine ½ cup balsamic vinegar and 1-2 tablespoons honey or brown sugar. Stir occasionally and simmer gently for 10-15 minutes until reduced by half and syrupy. Set aside to cool.
  2. Preheat grill or grill pan to medium-high heat. Brush grates or pan with olive oil to prevent sticking.
  3. Slice and oil the peaches: Halve and pit peaches, then lightly brush cut sides with olive oil.
  4. Grill peaches cut side down for 3-4 minutes until grill marks appear and peaches soften slightly. Flip and grill skin side for 2 more minutes. Remove and let cool slightly.
  5. Assemble the salad: Tear or slice burrata into chunks on a large platter or bowl. Arrange grilled peaches around or atop the cheese. Scatter basil leaves and optional greens or nuts if using.
  6. Season and dress: Drizzle cooled balsamic glaze and a little extra olive oil over the salad. Sprinkle with salt and freshly ground black pepper to taste.
  7. Serve immediately while peaches are warm and cheese is cool and creamy.

Notes

If peaches are less ripe, grilling enhances sweetness but avoid overcooking to keep them juicy. Tear burrata by hand to preserve creamy texture. Save some balsamic glaze for guests to add themselves. For dairy-free option, substitute burrata with ripe avocado slices or coconut yogurt. Store components separately if preparing ahead.
