A vibrant and refreshing summer salad combining juicy watermelon cubes, tangy feta, fresh mint, and a sweet-tangy honey lime dressing. Perfect for quick gatherings or a light side dish.

  • 4 cups watermelon, cut into 1-inch cubes (seedless preferred)
  • 1 cup feta cheese, crumbled
  • ¼ cup fresh mint leaves, roughly chopped
  • ½ small red onion, thinly sliced (optional)
  • 3 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon sea salt
  • Freshly ground black pepper, to taste

Instructions

  1. Cut the watermelon into 1-inch cubes, about 4 cups. Trim off any excess rind and seeds if needed.
  2. Thinly slice half a small red onion into half-moons (optional). Soak in cold water for 5 minutes and drain if you want to mellow the flavor.
  3. Roughly chop ¼ cup fresh mint leaves.
  4. In a small bowl or jar, whisk together 3 tablespoons honey, 2 tablespoons fresh lime juice, 1 tablespoon extra virgin olive oil, ½ teaspoon sea salt, and freshly ground black pepper until smooth.
  5. In a large mixing bowl, combine watermelon cubes, crumbled feta, chopped mint, and sliced red onion.
  6. Pour the honey lime dressing over the salad and gently toss to coat evenly, being careful not to crush the watermelon.
  7. Chill the salad in the refrigerator for at least 10 minutes before serving. Garnish with whole mint leaves if desired.

Notes

Keep the dressing separate until just before serving to prevent the watermelon from getting soggy. Use fresh mint for best flavor. Adjust honey and lime juice to taste. For vegan version, substitute feta with plant-based cheese and honey with maple syrup.
