A quick and refreshing summer snack combining juicy watermelon, salty feta, and fresh mint, finished with a bright honey lime drizzle. Perfect for last-minute parties or a light appetizer.

Ingredients

  • Seedless watermelon, cut into 1-inch cubes
  • Feta cheese, crumbled (preferably block-style)
  • Fresh mint leaves, whole
  • Honey, 1 tablespoon
  • Fresh lime juice, 2 tablespoons
  • Optional: sea salt, a light sprinkle

Instructions

  1. Cut the seedless watermelon into 1-inch cubes.
  2. Cut the feta block into 1-inch cubes or crumble gently into cubes.
  3. Rinse the mint leaves under cold water and pat dry.
  4. In a small bowl, mix 2 tablespoons fresh lime juice with 1 tablespoon honey until dissolved.
  5. Thread one watermelon cube, a mint leaf (folded if large), then a feta cube onto each skewer or toothpick. Repeat until all ingredients are used.
  6. Arrange skewers on a platter and drizzle the honey lime mixture evenly on top.
  7. Optionally, sprinkle a pinch of sea salt over the skewers.
  8. Serve immediately or chill briefly for 10 minutes if preferred cooler.

Notes

Use firm, ripe watermelon to avoid soggy skewers. Fold mint leaves before threading to release oils and make handling easier. Assemble skewers before drizzling honey lime to prevent sogginess. Can substitute tofu or vegan feta and maple syrup for a vegan version. Store leftovers in an airtight container with a paper towel to absorb moisture; best eaten within 24 hours.
