  • About 20 fresh mint leaves, washed and patted dry
  • 3 tablespoons balsamic glaze (thick, aged)
  • 1 tablespoon extra virgin olive oil (optional)
  • Freshly ground black pepper, to taste
  • 1012 wooden skewers, soaked in water for 30 minutes

Instructions

  1. Cut the watermelon into roughly 1-inch cubes, removing any seeds. Aim for firm but juicy pieces that hold their shape on the skewer. (About 10 minutes)
  2. Gently rinse the mint leaves and pat dry with a paper towel to prevent sogginess. (2 minutes)
  3. Crumble the feta cheese into small chunks or use pre-crumbled feta. Optionally, toss feta with a tablespoon of olive oil for a creamier bite. (3 minutes)
  4. Thread one watermelon cube, one mint leaf, and one feta cube onto each skewer. Repeat until the skewer is filled, leaving a small space at the bottom for holding. (10 minutes)
  5. Lay the skewers on a serving platter and lightly sprinkle freshly ground black pepper over the top. (1 minute)
  6. Drizzle the balsamic glaze evenly over the skewers using a spoon or squeeze bottle. Use sparingly to avoid overpowering the flavors. (2 minutes)
  7. Serve immediately. These skewers are best enjoyed fresh but can be chilled for up to an hour before serving.
