  • 1 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, roughly chopped
  • 2 tablespoons extra virgin olive oil
  • Juice of 1 fresh lime
  • Pinch of sea salt
  • Freshly ground black pepper to taste
  • Optional: thinly sliced red onions
  • Optional: toasted pine nuts

Instructions

  1. Using a sharp knife, cut the watermelon into about 1-inch cubes, aiming for uniform pieces. Place in a large mixing bowl.
  2. Crumble 1 cup of feta cheese into small chunks and add gently to the watermelon cubes.
  3. Rinse and dry fresh mint leaves thoroughly. Roughly chop about 1/4 cup and add to the bowl.
  4. In a small bowl, whisk together 2 tablespoons of extra virgin olive oil and the juice of one fresh lime. Add a pinch of sea salt and freshly ground black pepper to taste. Adjust seasoning if needed.
  5. Pour the dressing over the watermelon, feta, and mint. Gently toss with a salad spoon or tongs to coat ingredients without crushing the watermelon.
  6. Let the salad sit at room temperature for about 5 minutes to allow flavors to meld.
  7. Optional: Sprinkle thinly sliced red onions or toasted pine nuts on top before serving.
