Moist, spiced pumpkin oat muffins that are secretly healthy and perfect for any gathering. Made with whole grains and natural sweeteners, they’re a crowd-pleaser that disappears fast.

  • 1 ½ cups (135g) rolled oats
  • 1 cup (245g) pumpkin puree (100% pure pumpkin)
  • 2 large eggs, room temperature
  • ⅓ cup (80ml) maple syrup
  • ¼ cup (60ml) coconut oil, melted
  • ¼ cup (60ml) milk (dairy, almond, or oat)
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup dark chocolate chips, chopped walnuts, or dried cranberries (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together pumpkin puree, eggs, maple syrup, melted coconut oil, milk, and vanilla extract until smooth.
  3. Add rolled oats to the wet mixture and stir to combine. Let sit for 10 minutes to allow oats to absorb liquid.
  4. In a separate medium bowl, whisk together pumpkin pie spice, baking soda, and salt. If using mix-ins, add them to the dry ingredients now.
  5. Add dry ingredients to wet mixture. Fold gently with a spatula until just combined—do not overmix.
  6. Divide batter evenly among 12 muffin cups, filling each about ¾ full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Rotate pan halfway through for even browning.
  8. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Don’t skip the oat soak—it makes the muffins moist and tender. Use room temperature ingredients to prevent coconut oil from seizing. For vegan version, replace eggs with flax eggs (2 tbsp ground flaxseed + 6 tbsp water). Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
