  • 1 teaspoon turmeric powder
  • 3 tablespoons honey (raw preferred)
  • 2 tablespoons olive oil (extra virgin recommended)
  • 1 cup fresh cherries, pitted and halved (fresh or frozen)
  • 2 cloves garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • Salt to taste (sea salt or kosher salt preferred)
  • Freshly ground black pepper to taste
  • 1 teaspoon fresh thyme, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss the pitted cherries with 1 tablespoon olive oil, 1 teaspoon honey, and a pinch of salt. Spread them out on one side of the baking sheet in a single layer.
  3. In a small bowl, whisk together the honey, turmeric powder, 1 tablespoon olive oil, lemon juice, and minced garlic to make the glaze. Warm the honey gently if needed to blend smoothly.
  4. Pat dry the salmon fillets to ensure crisp skin. Lightly season with salt and pepper on both sides. Place the fillets skin-side down on the other half of the baking sheet.
  5. Brush the glaze generously over the salmon fillets.
  6. Roast in the oven for 12–15 minutes, until salmon is opaque and flakes easily with a fork, and cherries are glossy and slightly caramelized.
  7. Optional: Broil for 2 minutes for extra crispiness and deeper caramelization, watching carefully to avoid burning.
  8. Remove from oven and let rest for 3–5 minutes before serving.

Pat salmon skin dry for crispiness. Avoid overcrowding the baking sheet for even roasting. Warm honey slightly if thick to blend glaze smoothly. Watch cherries closely to prevent burning. Turn baking sheet halfway through roasting for even cooking. Tent with foil if glaze browns too quickly. Leftovers keep up to 2 days refrigerated; reheat gently.
