Kid-Approved Bourbon Peach BBQ Chicken Skewers: Easy 20-Minute Dinner

These quick and easy chicken skewers feature a sweet and smoky bourbon peach BBQ glaze, juicy chicken thighs, and fresh peaches, all grilled to perfection in about 20 minutes. A family-friendly dinner that pleases both kids and adults.

  • 1/2 cup peach preserves
  • 1/4 cup bourbon
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Pinch of cayenne pepper (optional)
  • 1.5 pounds boneless, skinless chicken thighs (about 4–5 thighs)
  • 2 ripe but firm peaches
  • 1 medium red onion
  • Wooden or metal skewers
  • Salt, to taste
  • Optional: fresh basil or mint for garnish

Instructions

  1. Make the sauce (5 minutes): In a small saucepan, combine peach preserves, bourbon, soy sauce, apple cider vinegar, minced garlic, smoked paprika, black pepper, and cayenne if using. Whisk over medium heat. Bring to a gentle simmer, then reduce heat to low and cook for 3-4 minutes, stirring occasionally, until slightly thickened. Remove from heat and set aside about 1/4 cup of the sauce for basting later.
  2. Prep the chicken (5 minutes): Cut chicken thighs into 1.5-inch chunks. Place in a mixing bowl and pour about half of the remaining sauce over them. Toss to coat. Let sit while prepping peaches and onion.
  3. Prep the peaches and onion (3 minutes): Cut peaches in half, remove pits, and cut each half into 4 wedges. Cut red onion into 1-inch chunks. Separate layers slightly.
  4. Assemble the skewers (5 minutes): Thread chicken, peach wedges, and onion chunks onto skewers in a pattern (chicken, peach, onion). Leave a little space between pieces. If using wooden skewers, soak them in water for 30 minutes first.
  5. Grill the skewers (8-10 minutes): Preheat grill or grill pan to medium-high heat. Lightly oil grates. Place skewers on grill and cook for 4-5 minutes on first side until grill marks appear and chicken releases easily. Flip and cook for another 4-5 minutes. During the last 2 minutes, brush reserved basting sauce over skewers.
  6. Check for doneness (1 minute): Chicken should be cooked through to an internal temperature of 165°F (74°C). Juices should run clear with no pink in the center.
  7. Rest and serve (2 minutes): Let skewers rest for a couple of minutes. Sprinkle with fresh basil or mint if using, and serve with reserved sauce on the side.

Notes

Soak wooden skewers for at least 30 minutes to prevent burning. Set aside basting sauce before adding raw chicken to avoid cross-contamination. For a non-alcoholic version, substitute bourbon with apple juice or apple cider. Use firm but ripe peaches to prevent them from falling apart on the grill.
