  • 2 medium acorn squash
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 pound ground mild Italian sausage
  • 1 small yellow onion, diced (about 1/2 cup)
  • 2 cloves garlic, minced
  • 1 cup cooked rice (white, brown, or leftover)
  • 1/2 cup shredded cheddar cheese (plus extra for topping)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup dried cranberries or chopped apple (optional)
  • 1/2 teaspoon dried sage
  • 1/4 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 2 tablespoons melted butter (for topping, optional)
  • 2 tablespoons brown sugar (for topping, optional)
  • 1/4 cup chopped pecans or walnuts (for topping, optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the acorn squash well. Cut each squash in half from stem to tip. Use a sturdy metal spoon to scoop out the seeds and stringy bits.
  2. Brush the cut sides and cavities with olive oil. Sprinkle with a little salt and pepper. Place the squash halves cut-side down on a baking dish or sheet pan. Roast for 25-30 minutes, until you can pierce the flesh easily with a fork.
  3. While the squash roasts, make the filling. Heat a large skillet over medium-high heat. Add the ground sausage and break it up with a wooden spoon. Cook for 5-6 minutes, until browned and no longer pink. Add the diced onion and cook for another 3 minutes until translucent. Stir in the garlic and cook for 30 seconds until fragrant.
  4. Reduce the heat to low. Stir in the cooked rice, dried cranberries or apple (if using), sage, and cinnamon. Mix everything together until well combined. Remove from heat and stir in the cheddar and Parmesan cheeses. Taste and adjust salt and pepper.
  5. When the squash is tender, carefully flip each half over using oven mitts. Spoon the filling generously into each cavity, mounding it slightly. Sprinkle extra cheddar cheese on top if desired.
  6. Return the filled squash to the oven. Bake for another 10-12 minutes, until the cheese is melted and bubbly and the filling is heated through. If using the topping, mix melted butter, brown sugar, and chopped nuts in a small bowl and sprinkle over the squash during the last 5 minutes of baking.
  7. Let the squash rest for 5 minutes before serving. The squash skin is edible, but younger kids might prefer it scooped out.

Notes

For easier cutting, microwave the whole squash for 2-3 minutes first. Don’t skip the cinnamon—it brings out the squash’s natural sweetness. Make extra filling and freeze for a quick meal later. Let kids help scoop out seeds to get them invested in eating. Leftovers taste even better the next day.
