A light and fresh charcuterie board for two, perfect for a romantic date or a quiet night in. It’s quick to assemble, uses simple ingredients, and is packed with crisp veggies, juicy fruit, and lean proteins.

Ingredients

Scale
  • 4 oz Fresh Mozzarella (bocconcini or ciliegine), drained
  • 4 oz Goat Cheese (chèvre), softened
  • 3 oz Aged Gouda or Manchego, thinly sliced
  • 4 oz Prosciutto, thinly sliced
  • 4 oz Salami (like Genoa or soppressata), thinly sliced
  • 4 oz Smoked Salmon
  • 1 cup Fresh Berries (strawberries, raspberries, or blueberries)
  • 1 medium Peach or Nectarine, sliced
  • 1/2 cup Cherry Tomatoes, halved
  • 1/2 English Cucumber, sliced into ribbons or rounds
  • 1/4 cup Kalamata Olives
  • 1/2 cup Almonds or Pistachios, raw or lightly toasted
  • 1/2 cup Crisp Breadsticks or Whole-Grain Crackers
  • 2 tbsp Honey or Balsamic Glaze
  • 1/4 cup Hummus or Whipped Feta

Instructions

  1. Prep Your Ingredients (5 minutes): Wash and dry all your produce. Slice the cucumber into thin ribbons using a vegetable peeler (or just into rounds). Halve the cherry tomatoes. Slice the peach or nectarine. If using a block of aged gouda, slice it into thin triangles or small cubes.
  2. Position Your Bowls (2 minutes): Place your small bowls of hummus, olives, and honey or balsamic glaze onto the board first. I like to put them in a triangle pattern—one in the top left, one in the bottom right, and one in the middle. This creates natural ‘zones’ for the food.
  3. Add the Cheese (3 minutes): Place the fresh mozzarella balls in a small cluster near one of the bowls. Put the goat cheese in a little dollop or log shape (you can even roll it in some cracked pepper or herbs). Fan out the slices of aged gouda in a line or a small fan shape. Don’t crowd them—let each cheese have its own space.
  4. Layer the Protein (2 minutes): Drape the prosciutto slices in loose, wavy folds. Don’t lay them flat—it looks much more appetizing with a little height. If using salami, you can fold them into little triangles or leave them in rounds. Place them near the cheese, not on top of it.
  5. Fill in with Produce (3 minutes): This is where you get to be an artist. Scatter the berries in little pockets around the board. Place the peach slices in a small fan. Tuck the cucumber ribbons in between the cheese and meat. Add the cherry tomato halves in small clusters. The goal is to fill in all the empty spaces so no board is showing.
  6. Add the Crunch & Garnish (2 minutes): Sprinkle the almonds or pistachios into any remaining gaps. Arrange the breadsticks or crackers in a small stack or a fan shape. You can also tuck a few fresh herb sprigs (like basil or mint) around the board for a pop of green. A little sprinkle of flaky sea salt over the tomatoes and cucumber is a game-changer.

Notes

Take your cheese out of the fridge 20-30 minutes before serving for best flavor. Don’t overcrowd the board; give each ingredient breathing room. Think about flow: place crackers near cheese, honey near goat cheese, and keep olives away from berries. Use your hands for arranging delicate items. This board is best served fresh.
