  • 1 large egg, beaten (for topping)
  • Coarse sea salt or pretzel salt (for topping)
  • ½ cup plain Greek yogurt (for sauce)
  • 3 tablespoons whole grain mustard (for sauce)
  • 1 tablespoon Dijon mustard (for sauce)
  • 1 tablespoon honey (for sauce)
  • 1 teaspoon apple cider vinegar (for sauce)
  • Pinch of salt and black pepper (for sauce)

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110°F) with honey. Sprinkle yeast on top and let sit for 5-7 minutes until foamy.
  2. Make the dough: Add Greek yogurt, melted butter, and salt to the yeast mixture. Stir to combine. Add whole wheat flour and all-purpose flour, one cup at a time, mixing until a shaggy dough forms.
  3. Knead the dough: Turn dough onto a lightly floured surface. Knead for 5-6 minutes until smooth, elastic, and slightly tacky.
  4. First rise: Place dough in a lightly oiled bowl, cover with a clean towel, and let rise in a warm spot for 20-25 minutes until puffy. Preheat oven to 425°F and line a baking sheet with parchment.
  5. Prepare the baking soda bath: Bring 6 cups of water to a boil in a large pot. Carefully add baking soda (it will bubble up), then reduce heat to a gentle simmer.
  6. Shape the bites: Punch down dough and divide into 4 equal pieces. Roll each into a 12-inch long rope, 1 inch thick. Cut each rope into 1-inch pieces (about 40-48 total).
  7. Boil the pretzel bites: Working in batches of 8-10, drop bites into simmering baking soda water. Boil for 30 seconds, flip, and boil another 30 seconds. Transfer to prepared baking sheet with a slotted spoon.
  8. Egg wash and salt: Beat egg with 1 tablespoon water. Brush each bite with egg wash and sprinkle generously with coarse sea salt.
  9. Bake: Bake for 12-15 minutes, rotating pan halfway, until deep golden brown.
  10. Make the sauce: While baking, whisk together Greek yogurt, whole grain mustard, Dijon mustard, honey, apple cider vinegar, salt, and pepper. Refrigerate until ready to serve.
