  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (226g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs, room temperature
  • 1 tablespoon pure vanilla extract
  • 1 cup (240ml) whole milk, room temperature
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries; frozen works too, thawed and drained)
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • 1 cup (226g) unsalted butter, softened (for buttercream)
  • 4 cups (480g) powdered sugar, sifted
  • 2 teaspoons pure vanilla extract (for buttercream)
  • 34 tablespoons heavy cream or milk (for buttercream)
  • A pinch of salt (for buttercream)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch cake pans or line with parchment paper.
  2. In a medium bowl, sift together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat softened butter and sugar on medium-high speed until light and fluffy, about 4-5 minutes.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. With mixer on low, add flour mixture in three parts, alternating with milk in two parts, beginning and ending with flour. Mix just until combined.
  6. In a small bowl, toss berries with sugar and lemon juice. Let sit for 10 minutes to macerate.
  7. Divide batter evenly between prepared pans. Bake for 30-35 minutes or until a toothpick inserted in center comes out clean.
  8. Let cakes cool in pans for 10 minutes, then transfer to cooling racks to cool completely.
  9. For buttercream, beat softened butter until creamy, about 2 minutes. Gradually add sifted powdered sugar on low speed.
  10. Add vanilla extract, salt, and 3 tablespoons cream. Beat on high until fluffy and smooth. Adjust consistency with more cream or sugar if needed.
  11. Place one cake layer on serving plate. Spread a layer of buttercream, then spoon over berry filling.
  12. Top with second cake layer and frost top and sides with remaining buttercream. Decorate with extra berries if desired.
  13. Chill cake for at least 30 minutes before slicing to let buttercream set.

Notes

Use room temperature ingredients for best results. Do not overmix batter to avoid toughness. Macerate berries to reduce moisture and enhance sweetness. Chill buttercream if too soft before frosting. For dairy-free or vegan versions, substitute butter and milk with plant-based alternatives and use flax eggs.
