Ingredients

  • Sliced prosciutto (4 oz)
  • Sliced salami (4 oz) – Genoa salami recommended
  • Pepperoni slices (3 oz)
  • Sharp cheddar cheese block (8 oz)
  • White cheddar or mozzarella sticks (4 oz)
  • Brie cheese wheel (4 oz)
  • Gouda slices (4 oz)
  • Butter crackers (about 1 cup) – like Ritz or Club crackers
  • Pretzel sticks (1/2 cup)
  • Breadsticks (optional, 1/2 cup)
  • Red grapes (1 cup) – seedless recommended
  • Cherry tomatoes (1/2 cup)
  • Baby carrots (1/2 cup)
  • Pickles (1/4 cup) – dill or bread-and-butter
  • Honey (2 tbsp)
  • Whole grain mustard (2 tbsp)
  • Olives (1/4 cup) – kalamata or green, pitted
  • Fresh rosemary sprigs (optional) – for garnish

Instructions

  1. Prepare the Base (5 minutes): Arrange crackers in a football shape on the board. Place them close together in a tight oval, leaving a small gap in the center. Use about 20-25 crackers.
  2. Layer the Meats (5 minutes): Roll prosciutto slices into loose cylinders and place along the outer edge of the football shape. Fold salami slices in half and arrange in a row down the center. Roll pepperoni slices into small roses and tuck into any gaps.
  3. Add the Cheese (5 minutes): Slice sharp cheddar block into thin triangles (1/4-inch thick) and arrange in a single layer over the meat, slightly overlapping. Place white cheddar or mozzarella sticks in two parallel lines down the center for laces. Add small perpendicular slices for cross-stitches.
  4. Fill the Gaps (3 minutes): Tuck brie wheel into one corner. Arrange gouda slices in a fan pattern near the brie. Fill empty spaces with grapes, cherry tomatoes, baby carrots, and pickles.
  5. Add the Spreads (2 minutes): Place small bowls of honey and whole grain mustard in corners. Drizzle honey over brie wheel. Add olives in a small pile near the center.
  6. Garnish and Serve (2 minutes): Tuck fresh rosemary sprigs around edges. Serve immediately at room temperature.

Notes

Take cheese out of fridge 30 minutes before assembling for easier slicing and better texture. Roll meats tightly to prevent unrolling. Don’t overcrowd the board – leave about 1 inch between items. Assemble no more than 2 hours before serving to keep crackers crisp. If board slides, place a damp paper towel underneath.
