  • 1 lb ground beef (80/20 preferred)
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 packet taco seasoning (or 3 tbsp homemade blend)
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes with green chiles, drained
  • 2 cups shredded Mexican blend cheese (or cheddar)
  • ½ cup pickled jalapeños, chopped (optional)
  • Fresh cilantro, chopped (for garnish)
  • Green onions, sliced (for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the beef: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until no longer pink (5-7 minutes). Drain excess fat.
  3. Add aromatics: Add diced onion and cook 2-3 minutes until softened. Add minced garlic and cook 30 seconds until fragrant.
  4. Season the meat: Sprinkle taco seasoning over beef mixture. Add ¼ cup water and stir. Simmer 2 minutes until sauce thickens. Remove from heat.
  5. Make creamy base: In a medium bowl, beat softened cream cheese until smooth. Stir in sour cream until fully combined.
  6. Layer: Spread cream cheese mixture evenly into a 9×13 inch baking dish.
  7. Add beans and tomatoes: Sprinkle drained black beans over cream cheese layer. Spoon drained diced tomatoes with green chiles over beans.
  8. Top with beef: Spoon seasoned ground beef mixture over tomato layer, spreading evenly.
  9. Add cheese: Sprinkle shredded Mexican blend cheese over the top, covering completely.
  10. Bake: Place dish in preheated oven and bake 15-20 minutes until cheese is melted and bubbly and edges start to brown.
  11. Garnish and serve: Remove from oven, let cool 2-3 minutes. Top with pickled jalapeños, fresh cilantro, and green onions. Serve immediately with tortilla chips.

Notes

Don’t skip draining the tomatoes or the dip will be watery. Soften cream cheese properly to avoid lumps. Let dip rest for a few minutes after baking to set layers. Can be assembled up to 24 hours ahead and refrigerated before baking. For a vegetarian version, skip the beef and add extra black beans or sautéed mushrooms.
