  • 2 cups (480 ml) boiling water (divided — 1 cup per flavor)
  • 2 cups (480 ml) cold water (divided — 1 cup per flavor)
  • 1 cup (240 ml) heavy whipping cream, cold
  • 2 tablespoons (25 g) granulated sugar
  • 1 teaspoon (5 ml) vanilla extract
  • Optional: Fresh blueberries and sliced strawberries for garnish
  • Optional: Mint leaves for garnish

Instructions

  1. Prepare the Strawberry Jello Layer: Dissolve one box of strawberry gelatin mix in 1 cup boiling water. Stir until completely dissolved (about 2 minutes). Add 1 cup cold water and stir again.
  2. Pour and Chill: Pour the strawberry jello evenly into clear cups, filling each about one-third full. Refrigerate for 30-40 minutes until firm but slightly tacky.
  3. Prepare the Blueberry Jello Layer: Dissolve the blueberry gelatin mix in 1 cup boiling water in a separate bowl. Stir well until dissolved. Add 1 cup cold water and stir.
  4. Add the Blueberry Layer: Once the strawberry layer is firm, slowly pour the blueberry jello over it, filling cups another third. Refrigerate for another 30-40 minutes to set.
  5. Make the Whipped Cream: Combine cold heavy cream, granulated sugar, and vanilla extract in a chilled bowl. Beat with a hand mixer or whisk until soft peaks form (3-5 minutes).
  6. Pipe the Whipped Cream Stars: Spoon whipped cream into a piping bag fitted with a star tip (or a plastic bag with a small corner cut). Pipe star shapes on top of each cup.
  7. Chill and Serve: Refrigerate assembled cups for at least 1 hour before serving. Optionally garnish with fresh blueberries, strawberry slices, and mint leaves.

Notes

Pour jello slowly over the back of a spoon to avoid mixing layers. Chill each layer until slightly tacky before adding the next. Use cold water for best texture. Whip cream in a cold bowl and stop at soft peaks to avoid grainy texture. Practice piping stars on parchment paper if new to piping. Can be made dairy-free by substituting coconut cream for heavy cream and vegan gelatin alternatives.
