  • 3/4 cup fresh blueberries (frozen works fine)
  • 1/2 cup powdered sugar (for glaze, optional)
  • 12 tbsp fresh lemon juice (for glaze, optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, beat the softened cream cheese with granulated sugar until smooth and creamy (2-3 minutes with a hand mixer or 5 minutes by hand). Add vanilla extract, fresh lemon juice, and lemon zest. Mix until silky smooth. Add a splash of milk or cream if too stiff.
  3. Unfold or roll out the thawed puff pastry sheet on a lightly floured surface to smooth creases (about 12 x 12 inches). Cut into 4 equal squares.
  4. Place each puff pastry square on the lined baking sheet. Prick the center area with a fork, leaving about a 1-inch border around the edges.
  5. Spoon about 2 tablespoons of the cream cheese mixture into the center of each square. Top with a generous handful of fresh blueberries, pressing lightly into the cream cheese.
  6. Fold the edges of the puff pastry slightly over the filling to create a rustic border. Brush the exposed edges with beaten egg for a glossy finish.
  7. Bake for 18-22 minutes until the pastry is puffed and golden brown and the filling is set. Watch closely after 18 minutes to avoid burning.
  8. While cooling slightly, whisk powdered sugar with fresh lemon juice until smooth but thick enough to drizzle (optional).
  9. Drizzle the lemon glaze over the warm pastries and let cool for at least 10 minutes before serving.

Keep puff pastry cold before working to maintain flakiness. Whip cream cheese filling until smooth for best texture. Avoid overfilling to prevent soggy pastry. Tent with foil if edges brown too fast. Frozen blueberries should be thawed and drained to reduce moisture. Can be made dairy-free or gluten-free with substitutions.
