  • 1 pound large shrimp, peeled and deveined
  • 8 ounces angel hair pasta
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste
  • 1/4 cup dry white wine or chicken broth

Instructions

  1. Bring a large pot of salted water to a boil. Add angel hair pasta and cook 2 to 3 minutes until al dente. Drain, reserving 1/2 cup pasta water. Set aside.
  2. Pat shrimp dry and season with salt and black pepper.
  3. Heat 2 tablespoons butter and olive oil in a large skillet over medium heat. Add garlic and sauté about 1 minute until fragrant, stirring constantly.
  4. Add shrimp in a single layer. Cook 2 minutes on one side until pink edges appear, flip and cook 1 to 2 minutes more until opaque. Remove shrimp and set aside.
  5. Pour white wine or chicken broth into skillet. Scrape browned bits and let reduce 2 to 3 minutes.
  6. Stir in remaining 2 tablespoons butter, lemon juice, and red pepper flakes. Let butter melt and sauce come together, about 1 minute.
  7. Return shrimp and drained pasta to skillet. Toss gently to coat. Add reserved pasta water a tablespoon at a time if needed to loosen sauce.
  8. Stir in parsley and adjust salt and pepper to taste. Remove from heat.
  9. Serve immediately with a lemon wedge.

Notes

Watch shrimp closely to avoid overcooking; remove as soon as they curl and turn pink. Reserve pasta water to adjust sauce consistency. Use fresh garlic for best flavor and avoid burning it by stirring constantly.
