Instructions

  1. Prepare the Mango Slaw (10 minutes): In a medium bowl, combine shredded cabbage, julienned mango, chopped cilantro, and jalapeño if using. In a small bowl, whisk together fresh lime juice, honey, and a pinch of salt. Pour dressing over slaw and toss gently to combine. Refrigerate while cooking shrimp.
  2. Season the Shrimp (5 minutes): Pat shrimp dry with paper towels. Toss shrimp with chili powder, salt, and pepper evenly.
  3. Cook the Shrimp (6-8 minutes): Heat olive oil in a large skillet over medium-high heat. Add shrimp in a single layer and cook about 2 minutes on one side until pink and slightly golden, then flip.
  4. Add Garlic Butter (2-3 minutes): After flipping shrimp, add butter and minced garlic to the pan. Stir gently to coat shrimp as butter melts and garlic softens. Cook another 2-3 minutes until shrimp are opaque and sauce thickens slightly.
  5. Warm the Tortillas (2 minutes): Warm tortillas on a dry skillet or microwave wrapped in a damp towel until pliable.
  6. Assemble the Tacos: Spoon garlic butter shrimp onto each tortilla, top generously with mango slaw, and squeeze fresh lime juice over everything. Serve immediately.
