Instructions

  1. In a small mixing bowl, combine 4 ounces of softened cream cheese with 1 tablespoon of mayonnaise. Mix well until smooth and spreadable. Add a pinch of salt and pepper. (About 3 minutes)
  2. Place one 10-inch flour tortilla flat on a clean cutting board. Spread the cream cheese mixture evenly over the surface, leaving about a half-inch border around the edges. (2 minutes)
  3. Layer approximately 3 ounces of thinly sliced turkey evenly over the cream cheese. Add a small handful of fresh spinach leaves, a sprinkle of shredded carrots (about 2 tablespoons), and thin cucumber slices evenly across. Season lightly with salt and pepper. (4 minutes)
  4. Starting from one edge, carefully roll the tortilla tightly but gently to avoid tearing. Wrap the rolled tortilla in plastic wrap or parchment paper and place it in the fridge for at least 10 minutes to firm up.
