  • 4 cups watermelon, cubed (seedless if possible, fresh or frozen)
  • 1 pint lime sherbet (about 475 ml)
  • 1/4 cup freshly squeezed lime juice (60 ml)
  • 2 cups club soda or sparkling water (480 ml)
  • 2 tablespoons simple syrup (30 ml), optional
  • A handful fresh mint leaves, roughly chopped or whole
  • Lime slices for garnish

Instructions

  1. Cut about 4 cups (600 grams) of watermelon into bite-sized cubes, removing seeds if needed.
  2. In a large punch bowl, combine 1/4 cup (60 ml) freshly squeezed lime juice with 2 tablespoons (30 ml) simple syrup and stir gently until dissolved.
  3. Scoop 1 pint (475 ml) lime sherbet into the punch bowl. Let it soften slightly at room temperature for 5 minutes if too hard.
  4. Slowly add 2 cups (480 ml) chilled club soda or sparkling water. Stir gently with a wooden spoon or ladle to combine without breaking up the sherbet too much.
  5. Fold in the prepared watermelon cubes gently to keep the fruit intact.
  6. Add a handful of fresh mint leaves and float a few lime slices on top for garnish.
  7. Refrigerate the punch for 20-30 minutes before serving. Serve chilled with or without ice.

Notes

Use freshly squeezed lime juice for best flavor. Stir gently when adding club soda to preserve fizz. Serve within a couple of hours to maintain texture. For dairy-free option, substitute lime sherbet with lime or lemon sorbet. Optional simple syrup can be adjusted based on watermelon sweetness. Refrigerate before serving for best taste.
