Refreshing Watermelon Mint Popsicles

A simple, quick, and refreshing summer treat combining juicy watermelon, fresh mint, and zesty lime, perfect for cooling down on hot days.

Ingredients

  • 4 cups (600g) seedless watermelon, chopped into chunks
  • 1012 fresh mint leaves, gently torn or chopped
  • 2 tablespoons (30ml) fresh lime juice (about 1 lime)
  • 12 tablespoons (15-30ml) honey or agave syrup, adjust to taste
  • 1/4 cup (60ml) water
  • A pinch of salt (optional)

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into chunks and remove any seeds if needed.
  2. Gently tear or chop 10-12 fresh mint leaves and muddle lightly using the back of a spoon or muddler to release oils without bitterness.
  3. In a blender or food processor, combine watermelon chunks, muddled mint, 2 tablespoons fresh lime juice, 1-2 tablespoons honey or agave, 1/4 cup water, and a pinch of salt. Blend until smooth, about 30 seconds to 1 minute.
  4. Taste the mixture and adjust sweetness or lime juice as needed, blending briefly again if you add anything.
  5. Pour the mixture into popsicle molds, leaving a small gap at the top for expansion, and insert sticks.
  6. Freeze molds for at least 4-6 hours or preferably overnight until fully frozen.
  7. To unmold, run warm water briefly over the outside of the molds and serve immediately.

Notes

Do not over-muddle the mint to avoid bitterness. For texture, add small watermelon chunks into molds before freezing. To reduce iciness, try using coconut water instead of plain water. Popsicles last 1-2 weeks in the freezer. Let sit a few minutes before eating for easier biting.
