Ingredients

Scale
  • 4 oz Brie or Camembert
  • 4 oz Aged Cheddar or Gouda
  • 2 oz Gorgonzola or mild Roquefort (optional)
  • 46 thin slices prosciutto
  • 46 slices Genoa or Soppressata salami
  • A few slices of Capicola or Speck (optional)
  • Handful of red grapes
  • A few sliced strawberries
  • Sliced apple (tossed in lemon juice)
  • ¼ cup dried apricots or figs
  • High-quality crackers (water crackers or rosemary-infused crisps)
  • Toasted baguette slices (brushed with olive oil and baked at 350°F for 5 minutes)
  • Small handful of Marcona almonds or candied pecans
  • 2 tbsp honey or fig jam
  • 1 tbsp whole-grain mustard
  • A few dark chocolate squares
  • Cornichons or small gherkins (optional)
  • A few pitted olives (Castelvetrano recommended, optional)

Instructions

  1. Start with the Bowls (5 minutes): Place small bowls or ramekins on the board as anchor points. Put honey in one, fig jam in another, and mustard in a third.
  2. Place the Cheeses (3 minutes): Put the larger pieces of cheese on the board. Place brie on one side and cheddar on the other. For brie, leave the rind on. For cheddar, cut a few slices in advance and fan them out. Crumble blue cheese in a small pile nearby.
  3. Add the Meats (4 minutes): Fold or drape the meats around the cheese. Fold prosciutto into loose ribbons. Roll up salami slices and stack them to add height and visual interest.
  4. Fill in with Fruit and Crunch (5 minutes): Use fruit to fill gaps. Place a cluster of red grapes in an empty space. Tuck dried apricots near hard cheese. Fan crackers out in small groups around the board, creating little ‘stations’.
  5. Add the Finishing Touches (3 minutes): Sprinkle almonds or pecans into remaining small spaces. Place cornichons and olives in little piles. Drizzle a tiny bit of honey directly over the brie wheel. Tuck dark chocolate squares in a corner.
  6. The Final Look (1 minute): Step back and look at your board. Fill any big empty spots with a cracker or piece of fruit. The board should look full and generous but not crowded. Optionally, add a single fresh rose or a small tea candle on the side.

Notes

Take cheese out of the fridge 30-45 minutes before serving for best flavor. Assemble the board no more than 15-20 minutes before serving to keep crackers crunchy and fruit fresh. For a vegetarian version, skip the meat and add marinated artichoke hearts, roasted red peppers, and hummus. For a low-carb version, replace crackers with cucumber slices, bell pepper strips, and endive leaves.
