Savory Honey Garlic Slow Cooker Chicken Thighs

A perfect family dinner recipe featuring tender, fall-off-the-bone chicken thighs slow cooked in a sticky, sweet, and savory honey garlic sauce. Easy to prepare and great for busy weeknights.

  • 2 pounds bone-in, skin-on chicken thighs
  • 1/4 cup honey (85g)
  • 4 cloves garlic, minced
  • 1/4 cup low sodium soy sauce (60ml)
  • 2 tablespoons rice vinegar (30ml)
  • 1/3 cup chicken broth (80ml)
  • 1 tablespoon olive oil (15ml), optional for browning
  • 1/2 teaspoon ground black pepper (1g)
  • 1/4 teaspoon red pepper flakes, optional
  • 1 tablespoon cornstarch or arrowroot starch (8g)
  • 2 tablespoons cold water (30ml) for slurry

Instructions

  1. Pat the chicken thighs dry with paper towels and season lightly with ground black pepper.
  2. Optional: Heat olive oil in a skillet over medium-high heat. Brown chicken thighs skin side down for 4-5 minutes until golden and crispy, then flip and cook for another 3 minutes.
  3. In a mixing bowl, whisk together honey, minced garlic, soy sauce, rice vinegar, and chicken broth until well combined.
  4. Place browned chicken thighs skin side up in the slow cooker. Pour the honey garlic sauce evenly over the top. Sprinkle red pepper flakes if using.
  5. Cover and cook on low for 5-6 hours or on high for 3-4 hours until chicken is fork-tender and reaches an internal temperature of 165°F (74°C).
  6. Remove chicken from slow cooker and set aside. Mix cornstarch with cold water to create a slurry.
  7. Pour the sauce from the slow cooker into a saucepan over medium heat. Stir in the slurry and cook for 2-3 minutes until sauce thickens to a glossy glaze.
  8. Return chicken to the saucepan and spoon the thickened honey garlic sauce over each piece.
  9. Serve warm, optionally garnished with chopped green onions or sesame seeds, over steamed rice or with vegetables.

Notes

Browning the chicken before slow cooking is optional but recommended for added flavor and crispy skin. Use tamari or coconut aminos for a gluten-free version. If sauce is too thin after cooking, thicken with cornstarch slurry. Avoid overcrowding the pan when browning chicken to prevent steaming.
