  • 3 pounds boneless, skinless chicken thighs
  • 23 chipotle peppers in adobo, finely chopped
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 1 medium onion, finely diced
  • 1/2 cup chicken broth
  • 2 tablespoons tomato paste
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 12 small slider buns (soft and fresh)
  • Optional toppings: coleslaw, pickled red onions, sliced avocado

Instructions

  1. In a mixing bowl, combine the finely chopped chipotle peppers, honey, minced garlic, diced onion, tomato paste, apple cider vinegar, smoked paprika, cumin, salt, and pepper. Stir well until all ingredients form a smooth paste.
  2. Place the 3 pounds of boneless, skinless chicken thighs in the slow cooker. Pour the prepared sauce over the chicken, making sure every piece is nicely coated. Add the 1/2 cup chicken broth to keep things moist.
  3. Cover the slow cooker and set it on low for 6 to 7 hours. The chicken should be tender enough to shred easily. If short on time, cook on high for 3 to 4 hours.
  4. Once cooked, remove the chicken pieces and shred them using two forks or meat shredders. Return the shredded chicken to the slow cooker and stir it into the sauce to absorb all the flavors. Keep warm until ready to serve.
  5. Lightly toast the slider buns if desired. Prepare any optional toppings like coleslaw or pickled onions.
  6. Spoon a generous amount of the honey chipotle pulled chicken onto each bun. Add toppings as desired, then serve immediately.

Notes

If the sauce is too thin after shredding, cook on high for 15-20 minutes to thicken. Use chicken thighs for juiciness. Adjust chipotle peppers to control heat. Gloves recommended when handling chipotle peppers. Let chicken rest in sauce for 10 minutes before shredding. Optionally, grill or broil assembled sliders for 1-2 minutes for a charred texture.
