  • 2 pints (about 450g or 1 pound) cherry tomatoes
  • 3 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • Salt, to taste
  • Black pepper, freshly cracked, to taste
  • 12 ounces (340g) pasta (spaghetti or linguine preferred)
  • 1 cup loosely packed fresh basil leaves
  • 1 ball burrata cheese (about 8 ounces or 225g)
  • 1/4 teaspoon red pepper flakes (optional)
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat your oven to 275°F (135°C).
  2. Rinse and dry the cherry tomatoes. Toss them gently in a bowl with olive oil, minced garlic, salt, and black pepper until lightly coated.
  3. Arrange the tomatoes evenly on a parchment-lined baking sheet, avoiding overcrowding.
  4. Roast in the oven for 45 minutes to 1 hour, stirring halfway through for even caramelization.
  5. While tomatoes roast, bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente (about 8-10 minutes).
  6. Reserve 1 cup of pasta water before draining the pasta. Drain and set pasta aside.
  7. Transfer roasted tomatoes to a large mixing bowl. Add hot pasta, fresh basil leaves, and red pepper flakes if using. Toss gently, adding reserved pasta water a little at a time to reach desired sauce consistency.
  8. Plate the pasta and tear burrata cheese on top. Sprinkle with lemon zest if desired and garnish with extra basil leaves.
  9. Serve immediately.

Notes

Do not rush the roasting process; slow roasting at 275°F brings out the best flavor. Use parchment paper for easy cleanup. Reserve pasta water to loosen the sauce if needed. Be gentle when mixing to keep tomatoes intact. Fresh basil added at the end preserves its color and flavor. Burrata can be substituted with fresh mozzarella if needed. Leftovers keep well for up to 2 days; reheat gently in a skillet with olive oil or pasta water.
