  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour (190g), sifted
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup confetti sprinkles (about 50g)
  • Optional: vegan margarine or coconut oil and egg replacer or flax egg for dairy-free/vegan version

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet with parchment paper or a silicone mat.
  2. Cream the butter and brown sugar in a large bowl using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  3. Add the egg and vanilla extract; beat until fully combined and smooth.
  4. In a separate bowl, whisk together the sifted flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, folding gently or mixing on low speed just until incorporated.
  6. Fold in half of the confetti sprinkles, reserving the rest for topping.
  7. Portion the dough using a tablespoon or cookie scoop onto the lined baking sheet, spacing about 2 inches apart.
  8. Sprinkle the remaining confetti sprinkles on top of each dough ball and press lightly.
  9. Bake for 10-12 minutes until cookies are golden around the edges but still soft in the center.
  10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
